Wanted something light for dinner and these dumplings ticked all the boxes. Although it’s more common to eat it like a snack during breakfast or tea , these chai kuehs (vegetable dumpling) makes a good meal replacement too! Soft delicate skin with a nice bite to it, almost al dente. Should only be eaten with chili sauce! It keeps well too. Guess what I’m having for breakfast tomorrow? . . . . . . . . . . . .

LEMON GARLIC BUTTER SHRIMP WITH ASPARAGUS🍤🌱 . Credit📸 @eatwell101 . 1.5 lbs (700g) medium raw shrimp, peeled and deveined 1.5 (700g) asparagus (1 bunch) rinsed and trimmed 3 tablespoons butter 1 tablespoon olive oil 5 clove garlic, minced 1 teaspoon Italian seasoning 2 teaspoons onion powder Salt and fresh cracked pepper, to taste 1/4 cup (60ml) vegetable stock 1 tablespoon Sriracha (or any hot sauce you like) Crushed chili pepper flakes, optional Juice of 1/2 lemon Fresh chopped parsley or cilantro, for garnish DIRECTIONS 1. Place a large non-stick skillet with 1 tablespoon olive oil and 1 tablespoon butter over medium heat. Add the asparagus and season to taste. Saute until the asparagus is crisp-tender, 4-6 minutes. Remove from the pan and set aside. 2. In the same pan, add remaining 2 tablespoons butter and add shrimp. Season with salt and pepper, cook 1-2 minutes on one side. 3. Add the minced garlic, Italian seasoning, and onion powder. Stir to combine and flip the shrimp to cook on the opposite side. Cook for 1 minute then add 1/4 cup vegetable stock and Sriracha. Allow the sauce to reduce for 1 minute, making sure not to overcook the shrimp. 4. Push shrimp on the side and add asparagus back to the pan. Stir asparagus to coat them into the sauce and squeeze half of a lemon over the top of the shrimp and asparagus. Allow reheating for 1-2 minutes. Remove from heat, garnish with parsley, lemon slices, and red crushed chili pepper if you like. My favourite home-made curry 😍 This family favourite has been modified so many times over the years- we've added in extra nutrients but also like to keep it exciting. Considering how often I have it, it would soon get boring if it never changed 😂 Modification can be used to add in more vegetables 🍆 change the protein source 🍗 replace ingredients 💁 reduce ingredients 👇 or remove ingredients 🙅 You can modify recipes to make them healthier, to use ingredients you already have available and for personal preference. Originally this was made with paneer which is still my favourite protein option 🧀🙃 Today's version (makes 4 serves): Sauce 🍲 🍴half a cup of plain natural yoghurt 🍴half a cup of tomato paste 🍴half a cup of mango chutney 🍴one teaspoon of garam masala 🍴blend it together until smooth Cook in a large fry pan 🍳 🍴400g hard tofu (cubed) and remove onto a separate plate 🍴a few cloves of garlic 🍴an onion chopped Add 💁 🍴the sauce to the onion and garlic and simmer for a couple of minutes 🍴gradually stir in 1-2 cups of water until desired consistency 🍴2 cups of frozen peas 🍴the cooked tofu 🍴Simmer for another 5 minutes. Add more water if needed to thin it out again. Serve with 👌 👉tzatziki- natural yoghurt, finely chopped mint and cucumber 👉brown rice 👉home-grown broccoli from my mum's garden 🙏 obviously any broccoli or vegetable will do 😋 What changes do you make to your recipes? . . .
